Sweet Cream Cheese Blini

This recipe is one of the favorites of my church and of summer camp. I just happen to be the cook for summer camp.

The crepe is made with

6 eggs

2.5 cups whole milk

1.75 cups flour

These ingredients are whipped up in a blender and should have the consistency of heavy cream. Heat a frying pan until water sizzles when dropped on the surface. Use cooking spray each time you pour the batter. Pour approximately 1 scant 1/4 cup of batter in the pan and twirl it around until the batter is very thin. Turn the crepe when you see the batter getting dull.

serving suggestion

 

The filling is all to taste,

8oz. cream cheese

1/2 cup sour cream

1 tsp almond extract

powdered sugar until thick like frosting

put all ingredients into food processor and blend until smooth.

 

You can either buy the fruit topping or make it. I make my own and use:

1 cup blueberries

1 cup raspberries

1 cup strawberries

1/2 cup coconut sugar

3 Tbls Fresh Lime juice

2 Tbls arrow root made into a paste

Boil fruit and juice then add the arrow root mixture until slightly thickened.

Serve warm or cold
