Pascha traditions must be maintained!

This is one of the favorites of my parish. Everyone I know looks forward to the bacon wrapped dates thus I feel I must serve them every Pascha.

This year I’ve added a little surprise to the dates. I have stuffed them with an almond. The salt from the bacon, the sweet from the date and the crunch from the almond will be the perfect combination for this Pascha treat.

BWD-01Here is a view of the ingredients that I have used this year. Bacon (I use the thick cut), cinnamon, raw almonds, and pitted Medjool dates. Cut the bacon in half and spread out on a clean surface.

Sprinkle the bacon with cinnamon. Pit the date and stuff ½ of it with an almond and place one date per piece of bacon. Then roll the date up in the bacon and secure it with a tooth pick.

BWD-05Place the dates very slightly apart on a pan covered with aluminum foil.  (This saves time with the cleanup.)

Bake the dates at 350 degrees until the bacon is crisp, Place the baked dates on a paper towel to soak up any grease that remains and serve.

Enjoy!  Christ is Risen!
